Tomato, Leek and Red Lentil Soup

Tamatar, Leek aur Dhuli Masoor Dal ka Soup

This is a simple, easy and filling soup. You can make it as spicy as you wish. Here I have used frozen mixed tomatoes from my garden. You can use any type you like, including tinned ones. Experiment with adding a handful of lentils to other soups you make.

Ingredients

  • 300 gm. fresh tomatoes

  • 1 tbsp. oil/butter (optional)

  • 2 small leeks, chopped

  • 100 gm. red lentils (dhuli masoor)

  • 1/2inch piece of ginger

  • 2 cloves garlic (optional)

  • 1/2 tsp. Garam masala

  • 500 ml. vegetable stock, made from a cube or stock mix. If you don’t have stock, just use water, salt and pepper.

  • A handful of coriander leaves or herbs of your choice

Instructions

  1. Heat the butter/oil in a pan.

  2. Add ginger, garlic, leeks and sauté for 10 minutes, until leeks look soft.

  3. Add tomatoes, stir for a couple of minutes.

  4. Add stock/water, bring to boil and simmer until vegetables are soft.

  5. Transfer to a blender, add coriander leaves and blend.

  6. Sieve to remove any rough bits; seeds, skins etc.

  7. Add garam masala and any other seasoning you like. I sometimes add a few drops of hot chilli sauce.

  8. Adjust seasoning to your taste.

  9. Re-heat before serving and serve with tour choice of bread, including fresh Naans.
