Spicy Lamb Steaks or Lamb Chops

This is what I call my ‘this and that’ recipe. I make a marinade for steaks and chops often by mixing various things found in an average kitchen cupboard/fridge. All amounts are approximate and need to be adjusted according to taste. Serves 7-8

Ingredients

  • 8 lamb steaks. Always buy good quality meat for best results.

  • Marinade

  • 2-3 cloves of garlic, peeled and squeezed through a garlic press

  • 2 tbsp. sweet chilli sauce ( 1 tbsp. Encona is a good substitute). If you don’t have it, use any other chilli sauce or chilli oil

  • 1 tbsp. sherry

  • 1 tbsp. light Soya sauce

  • 1 tbsp. Worcester sauce

  • 1 heaped tbsp. whole grain mustard sauce.

  • 1 tbsp. ground mint leaves. or 1 tbsp. Mint Sauce

  • 1 tsp. coarsely ground black pepper.

  • Salt if necessary

  • 2 tbsp. olive or other cooking oil.

Instructions

  1. Place all marinade ingredients in a bowl and mix. Taste and adjust ingredients from the list according to your taste.

  2. Add lamb steaks or chops and coat them well. Keep in the fridge overnight for 5-6 hours, in a sealed container.

  3. Place on a wire wrack or an aluminium foil lined tray and grill on each side for 5-7 minutes, until well cooked and slightly burnt looking. They can also be cooked in a pan or a griddle. Or oven cook at 200C for 20-25 minutes.

  4. Serve with vegetable selection or Peas Pulao Rice or a Salad of choice.
