Spicy Indian Vinaigrette (Fat-Free )

In India, people don’t generally use an oily dressings on their salad. Often it is just a sprinkling of salt and pepper, mixed with a good vinegar or fresh lime juice. In summer months, I tend to make a mixed salad of chopped fresh fruits, berries like strawberries, blackberries, raspberries, salad vegetables like cucumber, radish, tomatoes etc., all mixed up in a bowl. I then add this dressing and serve it on a bed of shredded lettuce, often with a bowl of fat free vegetable soup. This amount is for a salad for 2 people.

Ingredients

  • 1 heaped tsp. Chat Masala*. If you don't have this, sprinkle a little of each of these; chilli powder, ground roast cumin, black pepper and a tiny amount of Garam Masala

  • Salt to taste

  • 2-3 tbsp. good quality vinegar

  • 1/2 tsp. sugar or sweetener

  • 2 tsp. chopped coriander leaves (optional)

  • You can add 1-2 tbsp. of olive oil if you wish.

Instructions

  1. Place all ingredients in a small jar, close lid and shake well.

  2. This dressing is also good for thickly sliced red onions, served with an Indian meal.
