Dhansak Masala Mix 1

This amount will suffice for 1 kg. meat/chicken and lentil Dhansak. You can make larger quantities and keep in a small jar. If you want to make Dhansak in a hurry, this can be used in place of many individual ingredients.

Ingredients

  • 5 dry, red chillies (adjust to taste)

  • 1 two inch piece of cinnamon sticks

  • 1 black cardamom

  • 5-6 cloves

  • 1 tsp. cumin seeds

  • 1 tbsp. coriander seeds

  • 1 tbsp. green or black cardamom seeds/pods

  • 8-10 black peppercorns

  • 1/2 tsp. turmeric powder

Instructions

  1. Dry roast all the whole spices in a wok or karahi, over a medium heat until they darken or there is a nice aroma of roasted spices.

  2. Cool.

  3. Grind to a powder.

  4. Mix with turmeric powder.

Notes

  • Even when you use this masala, instead of individual spices, you still need to give a "tarka" to finish off your dish: You will need 2-3 tbsp. cooking oil, 2 bay leaves, 2-3 medium onions peeled and sliced and a couple of dry red chillies. Heat oil, fry onions, add bay leaf and chillies. Stir quickly and add to the Dhansak. Cover, to infuse flavours.
