2 cups natural yoghurt
2 tbsp. or a handful of fresh mint leaves, puréed in a processor (or chop very finely)
1 small red onion, peeled and finely chopped
1 medium yellow or red pepper (Bell pepper or capsicum)
1/2 cup finely chopped cucumber (kheera or kakri)
1-2 green chillies, finely chopped
Salt to taste
1/2 tsp. coarsely ground roast cumin seeds.
Few mint leaves to garnish

1.Peel yellow/red pepper with a tomato peeler. If you don’t have one, soak pepper in boiling water for 3-4 minutes and then peel the skin off. You can leave the skin intact, if you wish.
2.Place all ingredients together in a large bowl, except the mint leaves for garnish, mix and transfer to a serving bowl.
3.Garnish with mint leaves.
4.Serve chilled.
