2 ripe bananas, medium sized, peeled and cut into bite size pieces
1 tsp. lemon juice
1 cup plain yoghurt
1 tubs. honey (you can use sugar or a sugar free sweetener)
1/2 cup desiccated coconut, unsweetened (fresh coconut is always better


1.Roast/dry fry coconut in a small pan or in a microwave, until a nice aroma rises and it changes colour to slightly brownish pink. You can toast the coconut in a microwave. Spread on a plate and cook on full for 3 (2+1) minutes. Keep aside.
2.Squeeze a little lemon juice over bananas, to keep them from discolouring.
3.Mix yoghurt with honey and half the coconut.
4.Add bananas and stir lightly.
5.Garnish with remaining coconut.
6.Serve chilled.
